Here at Cold Mountain Trout Company we are proud of the trout we produce. Fish raised on a smaller, local farm are of higher quality than those provided by huge operations that produce large quantities of trout. At such a high volume, quality is reduced by the necessity of cheaper feeds and dependence on antibiotics and other chemical medications. We naturally maintain the health of our fish. Our trout are raised on pure feed without color additives, antibiotics, growth or reproductive hormones in the pristine mountain streams running out of the Shining Rock Wilderness at an elevation of 3500 ft. above sea level, providing some of the coldest water in the trout industry. Excellent fish health is guaranteed by the quality stocking volume and the swift cold water flowing through our farm. The combination of these factors result in a naturally firm and plump, flavorful fish.

In addition to whole trout, we offer many different cuts of trout:  
 
A whole trout after it has been eviserated
A half a trout with the back bones and rib bones removed
A whole trout with the backbones and rib bones removed
Two halves of a trout with the backbones and rib bones removed. The head, tail and fins have also been removed

Smoked Trout

Our fish are smoked to perfection using the best of traditional methods. We use the finest spices, natural flavors and hickory wood.

 
         
 

Gift Baskets

Cold Mountain Trout Company also creates unique gift baskets that are perfect for the avid fisherman or someone who would just enjoy a sampling of our fine products. They are a great idea for businesses looking for a different type of gift for their clients. A gift basket from our company makes a unique gift particularly for out-of-town clients to give them a taste of Western North Carolina. If you wish, we can customize your gift basket with items you supply from your company, such as mugs, hats, etc... featuring your company logo. Our standard gift basket includes a Fishing Creel (style varies) filled with 1 lb. of smoked trout, a coffee mug, 2 sticks of trout jerky, 6 hand-tied flies in a handy storage box and a baseball cap (not pictured) with the Cold Mountain Trout Company logo.

Aquaculture

Cold Mountain Trout Company offers complete pond and stream stockings from 3 inch fingerlings to trophy size.

Stream management plans and pond assessments are also available.

 
   

Education

The Great Smoky Mountains Trout School offers a fun and educational day-long fishing workshop covering the basic biology and life histories of the three trout species, entomology (insects they like to eat), how to "read" the water and know where the fish will be, fly tying, casting demonstrations and fishing techniques with personal instruction on privately stocked water.

The course is held on Saturdays. The cost is $200/ person. The course limit is eight, but special accommodations can be made for groups. For more information go to our Fishing School web page or contact us.

   

Angling

Along with teaching fly fishing, our trout school also offers guided trips throughout the year on a limited basis (except Saturdays during school sessions). Guided trips can range from handicap accessible, on the demonstration stream and other private water, to remote wilderness hike in the stream for the more adventurous.

Lodging

Currently there are no lodging accommodations on our campus, however some excellent rental cabins are in our immediate area. The towns of Canton and Waynesville are located about 12 miles North of the campus and have many local accommodations including hotel chains and bed and breakfast.
